The aim of the Cocktail and Food Pairing course is to provide participants with the knowledge and skills necessary to harmoniously combine cocktails and gastronomic dishes, creating unique culinary experiences. Throughout the course, students will learn the basics of pairing, explore the different categories of cocktails and food, and develop their ability to create innovative and balanced combinations.

Program

  1. Introduction to cocktail and food pairing (30 minutes)
    • Concept and benefits of pairing.
    • Basic principles of harmony between flavours.
    • Importance of balance between cocktails and gastronomic dishes.
  2. Categories of cocktails and food (1 hour)
    • Types of cocktails: refreshing, bitter, sweet, etc.
    • Classification of gastronomic dishes: starters, main courses, desserts.
    • Traditional combinations of cocktails and food.
  3. Fundamentals of food and wine pairing (1 hour)
    • Basic flavours: sweet, sour, bitter, salty and umami.
    • General rules for pairing cocktails and food.
    • Complementing, contrasting and enhancing flavours.
  4. Cocktail and food pairing techniques (1 hour)
    • Pairing by similarity of flavours.
    • Pairing by flavour contrast.
    • Pairing by flavour intensity.
  5. Creating innovative pairings (30 minutes)
    • Practical session for participants to experiment with different combinations.
    • Development of personalised and original pairings.
    • Evaluation and discussion of the results obtained.

Methodology

The Cocktail and Food Pairing course will be conducted through a combination of theory and practice. Participants will receive a theoretical introduction to the basics of pairing and the different categories of cocktails and food. This will be followed by practical demonstrations of classic pairings and pairing techniques.

Students will have the opportunity to apply what they have learned in practical sessions, where they will be able to experiment with different cocktails and gastronomic dishes, looking for balanced and tasty combinations. Oscar Solana will provide personalised feedback and guidance to each participant.
